Semi-annual suppression inspection
Every commercial kitchen in Maryland must have its pre-engineered fire suppression system inspected by a certified technician every 6 months (§11.4). Expect $200–$500 per inspection depending on system size.
Wet chemical agent required
Any system installed or recharged after 1998 must be UL 300 certified. Legacy dry-chemical systems no longer meet code and typically void kitchen-specific insurance policies.
Portable extinguisher within 30 ft
NFPA 10 requires a Class K portable extinguisher within 30 feet of every commercial cooking appliance as a secondary defense. Tagged monthly, serviced annually, or it's a failed inspection.
